I’m going to use some of my veggies from my veggie garden in a couple of recipes. I’ve been busy harvesting what is left of the veggies, though a few plants still have more to give. There’s a blog post over on my Pepper the Prepper website about Lackluster Tomatoes & what to do with eggplants. If you have some tomatoes that aren’t up to par and since I like eggplant I went searching for recipes for both. If you’re interested check it out.
